Ingredients

  • 2 cups shredded rotisserie chicken
  • ¼ cup chopped red onion
  • ½ cup chopped celery
  • ½ cup avocado oil mayonnaise

Instructions

  • Stir well until all ingredients are evenly mixed.
  • Taste and adjust by adding a bit more salt, pepper, or mayonnaise if needed.

Notes

  • If you don’t have a rotisserie chicken for chicken salad, you can use slow cooker shredded chicken, Instant Pot shredded chicken, or any leftover grilled chicken breast. Make sure the chicken is well seasoned for the best flavor.
  • Any mayonnaise works well for this recipe. If you prefer something lighter, plain Greek yogurt is a great substitute that adds a tangy taste and creamy texture.
