Ingredients

For the Wrap

  • 1 batch of Mediterranean-style chicken recipe below
  • 1 cup of halved cherry tomatoes
  • ½ a medium cucumber thinly sliced
  • ¼ medium red onion thinly sliced
  • ½ cup of crumbled feta cheese
  • 8 romaine lettuce leaves sliced, if necessary
  • ¼ – ½ cup of creamy tzatziki sauce
  • ¼ – ½ cup of smooth hummus
  • 4 wraps your choice of wrap, such as lavash flatbread or your favorite

For the Chicken

  • 1 ½ lbs boneless skinless chicken thighs
  • 1 tablespoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Zest of one lemon

Instructions

  • Preheat your oven to 425°F (220°C). In a small bowl, combine dried oregano, onion powder, garlic powder, salt, pepper, and lemon zest.
  • Pat the chicken thighs dry with a paper towel, then toss them in the seasoning mix until evenly coated.
  • Arrange the seasoned chicken thighs in a 9x13-inch baking dish. Bake for 25-30 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  • Once cooked, remove the chicken from the oven and allow it to rest on a cutting board for 5 minutes before slicing into strips.
  • While the chicken bakes, slice the cucumber, cherry tomatoes, and red onion. Crumble the feta cheese, and slice the romaine lettuce leaves.
  • Lightly heat the wraps for a few seconds to make them more flexible.
  • Spread a thin layer of tzatziki and hummus on each wrap. Add a quarter of the sliced chicken, followed by cherry tomatoes, cucumber, red onion, feta cheese, and romaine lettuce.
  • Carefully roll each wrap, folding in the sides as you go to secure the fillings. Slice into halves or serve whole. Enjoy your delicious Mediterranean meal!
