Pat the chicken thighs dry with a paper towel, then toss them in the seasoning mix until evenly coated.
Arrange the seasoned chicken thighs in a 9x13-inch baking dish. Bake for 25-30 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
Once cooked, remove the chicken from the oven and allow it to rest on a cutting board for 5 minutes before slicing into strips.
While the chicken bakes, slice the cucumber, cherry tomatoes, and red onion. Crumble the feta cheese, and slice the romaine lettuce leaves.
Lightly heat the wraps for a few seconds to make them more flexible.
Spread a thin layer of tzatziki and hummus on each wrap. Add a quarter of the sliced chicken, followed by cherry tomatoes, cucumber, red onion, feta cheese, and romaine lettuce.
